In our standard planetary mixers, the agitator and attachment move around a stationary bowl.  These mixers have a spiral arm that rotates on a fixed vertical axis, while the bowl spins in a counter-clockwise direction.

This spiral construction gives each portion of the dough more time to rest between touches by the agitator/attachment.  This European design develops the gluten structure of the dough slowly and reduces heat caused by friction in large batches.  It prevents the dough from being too dry or too moist, and also reduces ingredient waste.
