Wood vs. Metal Pizza Peels

When deciding on a type of pizza peel to purchase, there are a few things to consider. But probably the most important is deciding between wood pizza peels and metal pizza peels.

Below are some differences between the two to consider:

Ease of Getting Your Pizza into the Oven

Wood peels are much better for getting your uncooked pizza easily off the peel and into the hot oven. When dusted with a bit of flour, the wooden peel will allow the pizza to slide right off, keeping all the toppings in place (and not on the floor of your oven).

Metal peels may collect condensation from the dough, causing the pie to stick to the peel as you try to slide it off, potentially upsetting the bottom of your pie, and disrupting your toppings.

Rotating and Removing the Pie

Because metal peels are thinner, they are slightly better for getting underneath the pie to move it around while cooking or to take the pie out of the oven. Once the pies are out of the oven, we do not recommend cutting them directly on the peels, as the blades can damage the peels and cut marks will eventually prevent the pies from sliding on and off the peels smoothly.

Maintenance and Durability

Metal peels – usually made of aluminum – are easy to care for, as you can simply wash and sanitize, without the need to air dry. They aren’t susceptible to stains or odors, and they are built to last a long time.

Wooden peels will also serve you for many years, but they take a bit of extra maintenance. Since wood can warp when wet, it is best to first seal your new wood peel with mineral oil to create a barrier against water when it is washed. When washing the peel, dip it into soapy water, wipe away the debris, then dry it thoroughly with a clean towel and set aside to continue air drying.

Some pizza masters have preferences and stick with one type no matter what. But you may want both types of peels in your kitchen – a wooden one for launching your pizza, and metal for removing it. Globe carries both metal pizza peels and wood pizza peels.
