I was reading an old mixer forum post the other day by a pastry chef who owned 4 different brands of mixers for different uses. She commented on the bowl shape of one that didn’t let her get a consistent mix, and the noise of another that made her think it could break at any moment.

She hoped that one would “fall of the counter” so she could replace it without feeling guilty.

I chuckled. Partly because she was witty. But mostly because her stories were similar to those we hear from our own customers, every day.

If You Hear an Easy Answer, Don’t Listen

The truth is that the answer to a brand question will never be an easy one, because it will never be the same for everyone.

In other words, if someone tells you that “X” brand is the best on the market and you have to get that one, run. Especially if they tell you before they know how you’re going to use it.

Some Questions to Ask as you Decide on a Mixer Brand

  1. What will you be mixing? While any commercial mixer worth its “salt” will be NSF certified for commercial settings, it doesn’t mean that they’ll handle meringue and pizza dough equally. There are a ton of factors to consider to choose the right one. Is it strong and stable enough to offer a consistent mix with your ingredients (i.e. egg whites, cold butter, or semolina)? Does the mechanism reach every portion of the bowl so you don’t have to stick a spatula in there? Are you going to want to knock it off the counter after a few batches of your prize recipe?
  2. Will you need a timer function or other more sophisticated control? Some brands and models offer different control options like timers and batch recalls to make mixing in a commercial setting easier. Simple features can make a big difference in productivity, and it’s hard to predict how they’ll impact your operation unless you talk to someone.   3. What’s most important to you? Capacity and machine footprint will play a part in your mixer decision, yes. But, style, strength of construction and capacity due to absorption of water are other factors that will affect the overall cost of ownership for your mixer. What attachments do you have, or will you need? Don’t let one unbalanced factor drive your brand choice.
