This model is used with an ice bath that is 5" deep with a mechanically assisted cold pan and is insulated on all four sides and bottom. 
Cres Cor offers a chill temp cabinet, the R-171-SUA-10 refrigerated cabinet designed to hold food and beverages at serving temperature. A forced air system provides even distribution of cold air and its stainless steel construction throughout offers ease of cleaning. This unit can maintain temperatures from 33 to 40 degrees and has an automatic defroster.

To keep it warm:

Steam tables, such as the Duke Aerohot WB305 gas waterbath steam table is an ideal option for your commercial kitchen or catering operation. This five section steam table comes with undershelf and legs formed of heavy gauge 430 series stainless steel. The entire unit shares one continuous waterbath. Temperature is controlled by an adjustable valve that is protected with safety pilots.

The cabinet is designed to provide holding temperatures of 140° F to 180°F to adequately keep your warm baked or cooked foods at safe holding and serving temperatures. With positive seal self-closing doors that have a 120° stay open feature and one piece magnetic door gaskets that are easily removed without tools for cleaning you will be pleased with the flexibility and reliability of your new True STA1H-1G. Larger units and those with solid doors are available, too.

A heated drawer warmer may be a solution for your restaurant. One such model is the Vulcan VW3S warmer with its large capacity via three drawers, resulting in lower a maintenance cost and lower energy use. Great for Mexican restaurants and concession stands. Each drawer can be set independently and different products can be kept at the proper temperature. The drawers and slides are removable for easy cleaning. This drawer warmer requires only a standard 115v outlet.
