The table below is for a standard place setting found in most restaurants. It is suggested to have at least 25% more in reserve stock.   1. Top column: Choose from the three categories the business model that best describes your size.
  2. How many seats do you have? Take that number and multiply it by the number in the rows below. (You will note that each utensil may have a different quantity.)
  3. Note: This formula are the rough requirements for how many pieces you need. (Add extras for reserve stock.)
