Residential microwaves can un-noticeably cook unevenly and leave cold spots. It is a given in the food service industry that food temperature is a very important health concern and expectation by you local inspectors. Failure to comply with health codes can lead to costly fines and lawsuits.

Residential microwaves are intended to be used just 3-5 times on average per day with only 1 or 2 people having access to it in an environment with a controlled ambient temperature.

Commercial microwaves are intended to be used 50-200 times on average per day and are tested to last and function in a kitchen with variable temps and humidity levels. Commercial microwaves must meet a set of criteria that are not considered with a residential unit along with being NSF certified.
