An immersion blender isn't as expensive as a traditional mixer or food processor, but you still want to make sure you're making a good investment for your business.
Here are a few things to think about if you're in the market for a new immersion blender.
1. Where will you be using it relative to a power source?
Immersion blenders are great because they pack a lot of power and versatility into a small machine. So where you use them is flexible, but remember that you still do need power.
If you don't need a heavy duty immersion blender, something like this cordless model from Waring might work. It has a rechargeable battery pack for the utmost in flexibility.

2. How much power do you need?
If you choose an immersion blender with variable speed, that should give you the majority of the flexibility you need to cover your usage.
However, do pay attention to the wattage/horsepower and make sure that the one you choose gives you enough power and rotations per minute (RPM) to get your desired results.
If you need to emulsify or blend a thick recipe, you'll need enough power in your machine to get the job done.
3. Do you need attachments?
