Dexter, Inc. Shares the Commercial Cutlery Edge

The staff at Globe Equipment recently had a workshop on commercial cutlery led by Dexter, Inc.'s area sales manager, Erik Bellerose (pictured right). During this training session, we explored the extensive line of commercial cutlery and kitchen utensils produced by Dexter. Not only did we discuss how knives are crafted, edge types were reviewed.

Knife Edge Types

Straight Edge – (also known as a plain edge) will cut without tearing or shredding. Think veggie and fruits.

Scalloped Edge – (or serrated) is ideal for bread and some fruit products. This knife features many curved edges protected by sharp points – perfect to break through hard crusts (or tough skins) while the curved edge will slice through soft interiors without damaging it.

Granton Edge(or Duo Edge) these knives are designed with indents, hollow ground ovals shaped like footballs, that run along the blade. This allows air and juices to enter the cut, reduces friction and then slicing is easier. The granton edge makes paper thin slices and prevents food from sticking to the blade. Ideal to carve meats.

Tiger Edge – This knife is actually a form of scalloped edge. It's a kicked-up version made for for the aggressive cutting of frozen foods. Used in the fishing industry for cutting of bait fish and to cut through cartilage.

Dexter Knife Line-upDexter, Inc makes a knife for literally every need of the commercial food service operation (or home kitchen). And if they don't have it, they have been known to invent it. Such is the case with knife model S104SCV-3. A bakery had the need for a three blade knife to score bread that was NSF approved. Dexter created and delivered. (It's that white-handled knife in the center of the photo.)
