How to Use the Decorator Tips Correctly

Application ideas

Wasabi Foam on Smoked Salmon Tartar

Difficulty: Easy Preparation time: 30 min.

Suitable for: Gourmet Whip , Thermo Whip , Thermo Xpress Whip , Cream Profi Whip

‘Foam’ Ingredients

  • 1 tablespoon soy sauce
  • 2 tablespoons lemon juice
  • ¾ cup cream cheese, full fat
  • 2 tablespoons sesame oil
  • ¾ cup sour cream
  • 2 ½ teaspoons wasabi from a tube

To Prep:

Mix all ingredients together. Place into a 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger. Shake vigorously. Refrigerate for 1-2 hours. (it is best to refrigerate whipper its side.)

To Serve:

Dice smoked salmon, avocado, and red onion. Season with salt, pepper, and lime juice. Using decorator tip, add to foam to a small dish or glass (martini glasses make a nice presentation). Top with salmon, avocado and red onion and a sprig of dill. Serve and enjoy immediately.

Saffron Foam

Difficulty: medium   Preparation time: 30 min. Shakes: 8

Suitable for: Gourmet Whip , Thermo Whip , Thermo Xpress Whip; For preparation with the stainless steel Star Tip


  • 1 cup heavy cream
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup white wine
  • 2/3 cup vegetable stock
  • 1/8 cup ml noilly Prat vermouth
  • ¼ teaspoon ground saffron

To Prep:

Bring white wine, vegetable stock and Noilly Prat to the boil. Season with salt, pepper and sugar. Add the heavy cream and saffron and pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake vigorously.

To Serve:

Plate the roasted scampi and saffron foam and garnish with the dill sprig. Note: The recipe is prepared using an iSi stainless steel Star Tip.
