Hobart CE20HD-3 Half Size Combi Oven is a 480 volt 3-phase unit that holds 20 half size pans. With the Hobart Combi Oven you can cook with dry convection heat, fan-assisted steam or you can use a combination of both. You are in control of the amount of steam (humidity) you want from 0% to 100% giving you virtually unlimited versatility in baking, grilling, roasting, steaming, proofing, rethermalization and low-temp cooking. Hobart's CE20HD-3 features multiple cooking modes, boilerless design with a steam generator, user friendly control panel that may be programmed with 100 recipes with 10 cooking phases, reversing fan, water injection button, alarm, 8 automatic cleaning programs and a 2-year parts warranty on control boards, 1-year warranty parts and labor for the rest of the unit. The combi is compatible with Traulsen RBC200 Blast Chiller.
