Countertop griddles, although they look alike, have many different options. They can be gas or electric, manual or thermostatically controlled, have a ½", ¾", or 1" thick cooking plate, and come with aluminum or chrome cooking surfaces.

Gas vs. Electric
Gas griddles generally reach temperature faster than electric. Once at temperature though, both will be able to maintain a constant heat. Operation costs for gas griddles are less expensive electric griddles due to the speed at which they can reach temperature.

Manual vs Thermostatically Controlled Griddles
Manual controls on a griddle top allow the user to control the temperature using settings such as low, medium, and high. A thermostatically controlled griddle top will allow the user set and keep the surface temperature at a fixed heat.

Griddle Plate Thickness
The thinner a plate, the faster it will respond to temperature changes. The disadvantage of a thinner plate is that it has a greater tendency to warp and pit. A thicker plate will provide better heat distribution and reduce cold spots on your cooking surface.

Cooking Surfaces
Chrome cooking surfaces are ideal if the customer is going to see the grilling process. They keep a high gloss shine during their use. Aluminum cooking surfaces are more inexpensive and more widely used.

Sandwich Griddles
Sandwich griddles come in two styles – grooved and flat. The grooved surfaces are also known as Panini Griddles and have weighted tops so that sandwiches get crisp and heated throughout. Flat sandwich griddles are also weighted and are great if you just want the bread on your sandwich toasted. These units are also good for are tacos, burritos, and wraps.
